Uh, just checking, still winter

Winter demands hearty meals. If you want to add nutrition, and maybe shed a few pounds this recipe will satisfy you and the family. Pull out and “grease” the lasagna pan, heat the oven to 400 degrees. With a grater slice 2-3 zuchinnies, and 4 large carrots. Cut 3 cloves of garlic.

Ingredients: 2-3 zuchinnis,
4 carrots,
1/8 cups raisin or dried fruit,
1 large (16 oz minimum) can of fancy/gourmet/organic tomato sauce
(or make your own fav)
2 cups of grated cheese (3-5 kinds of cheese mixed)
4 string cheeses on top
(or substitute yougurt)
optional add meat
1/4 cup chopped parsley


Play music, even dance if you like.

NO PASTA NEEDED! Use your zuchinni as pasta.
Layer in any order you wish:
zuchinni, carrots, garlic, cheese sauce until you pile the pan full. Get creative: add cut apples, apricots, or pears around the edges.
Add sliced string cheese to top. Use some parlsey to create a smile face on top. Raisins for eyes?
Bake: 20-30 minutes.

Sides: Baked beans, salad, oranges sliced. Garlic Bread? Dessert: flan?

If you have watched these videos too, you see this can be a great weight loss approach to zuchinni! If you cook the ingredients less, it also may have a crunchier texture.

The creative cook could use either thin slices of chicken grilled for the zuchinni, or ground chicken leftovers for a few layers. In this case, if you are a weight watcher, reduce the cheese.
