Salad thy name is Brussel Sprout
I’ve just come back from eating at Pizza Antica in San Jose where I had a great salad. Not only was it great, but it also used brussel sprouts in an innovative (and tasty) way.
Brussel sprouts are one of my favorite vegetables. Don’t write me off…they’re really good if cooked properly. Pizza Antica makes a warm brussel sprout salad with pancetta, coarsely-diced cooked egg, garlicky croutons and a vinegary vinaigrette (yes, that is possible).
The tangyness of the vinaigrette mixed with the crunch of the garlic croutons, the snap-cooked brussel sprout leaves and the sweet and tender pancetta served on top of a crisp pizza bread just made my day. Yes, it was the culinary equivalent of Clint Eastwood’s famous line. Oh, and it’s Halloween so the bartender was dressed like a penguin.
