Pork with garlic apricot soy sauce

I’ve been dining on a lotta swine lately. Don’t know why…it’s just the meat of the year for me. And it isn’t just the other white meat, it’s also flavorful and delicious. Trust me!

So I finally got the great recipe from Mom for roast pork with garlic-apricot-soy sauce. It has the perfect balance of sweet and savory and goes great with rice or potatoes.

Here’s the recipe:

Roast Pork w/Garlic-Apricot-Soy Sauce

Ingredients:

4 lbs. of pork shoulder (bone-in preferably)
1/3 cup of dark soy sauce
1/2 cup of apricot jam or apricot-pineapple jam
1/2 teaspoon of crushed red pepper
2-3 cloves of garlic chopped coarsely

Directions:

Preheat the oven to 375 degrees. Ideally, the pork should be roasted about 30 minutes for each pound of meat.

In a medium saucepan, combine the soy sauce, apricot jam, crushed red pepper and garlic. Bring these ingredients to a simmer for about 5 minutes until the jam melts and the sauce thickens. Use a whisk to make sure the apricot jam is incorporated entirely into the rest of the ingredients.

While the sauce cooks, wash the pork and dry with paper towels. Place the pork roast in a foil-lined roasting pan.

When the sauce is ready spoon it over the pork, reserving approximately 1/2 a cup of the sauce for basting. Place the pork roast in the oven, uncovered. Cook for 30 minutes and then baste with more of the sauce. Continue to cook for the predetermined time (depending on how many pounds of pork you are cooking…remember to cook for about 30 minutes for each pound of pork). After an hour, I suggest flipping the pork roast over and basting again so it cooks evenly.

Let the pork roast rest for about 20 minutes after it is cooked. Place a tin foil “tent” over it leaving small openings on the sides of the tent. Cut into delectable slices and enjoy!
