My Mama’s Salmon Croquettes, A Tad Healthier
In my intro post I mentioned my mom’s cooking skills. One of my very favorite things she would make when I was growing up was salmon croquettes. You might call them salmon cakes or salmon patties, but they’ll always be croquettes to me. We would almost always have them with green beans and macaroni and cheese. When I passed along the recipe for the first time, I insisted my friend Michael serve those same sides or not make it.
So with the cold, rainy weather and Rachael Ray on the television talking about comfort food, I did a mental scan of my cabinets and knew exactly what I was making for dinner.
Recipe for Salmon Croquettes
1 can (usually 15-16oz) of pink salmon
half a small onion or quarter of a large one, grated
1 celery stalk, chopped very fine
1 small cooked-until-tender potato, grated
1 egg
handful of parsley, chopped
salt, pepper, extra virgin olive oil
Heat the oven to 400 degrees. (<—This is where I veer from the original, in that I’m not going to fry them.) First thing, throw the potato into the microwave for about four minutes, with a few four pricks, until it’s tender. Meanwhile, drain the salmon and dump into a large mixing bowl. I prefer to pick out the bones and bits of skin. Add in the onion, celery, egg, and parsley and mix. Season with salt and pepper. When it comes time to grate the potato, I usually pop it into the freezer for a bit to cool it down. Mix in potato. Now divide into four sections and roll into balls, then flatten. Place on a cookie sheet and drizzle with a couple turns of olive oil. Bake for about 20-25 minutes, checking carefully to see if the bottoms are turning golden brown. If they are, turn on the broiler for a couple minutes to get the tops the same way.
Serve with homemade mac n cheese and green beans, or else.
p.s. They also taste great as a sandwich, with whatever you want to add. I just use ketchup.
