My Favorite Pizza, So Far

I love Trader Joe’s BBQ chicken pizza, but I was even more pleased when my friend Alisha made one from scratch. I decided to follow her lead and give it a go, as well.
I stocked up on
these ingredients:
bag of wheat pizza dough from Trader Joe’s
BBQ sauce ” ” ”
yellow corn
red onion
4 oz ball of mozzarella
can of pineapple chunks
2 chicken breasts
After pulling the dough out of the fridge, the first thing you’ll want to do is season your chicken breasts. I used chipotle chili powder, garlic, and a tablespoon on bbq sauce, mixed together and brushed on. Bake at 375 for 15 minutes. Go ahead and chop a few slices of red onion and drain the a few spoons of pineapple.
Later….
When the chicken is ready and out of the oven, adjust the heat to 425 and start to stretch out the dough, working it onto an oiled pizza stone or cookie sheet. Put a small ladleful of bbq sauce on top, spreading it evenly around. Cut the chicken into bite-sized pieces and put on pizza ( you probably won’t need all of it), then add corn and onions. Tear the mozzarella into chunks and spread about.
Bake for about 10 minutes and then remove and add pineapple. (Here’s where you learn from my mistake where I put the pineapple on at the start, causing the pizza to be a tiny bit saucy and therefore soggy.)
Bake for another 10-15 minutes then slice and serve with your favorite salad. I like to put some bbq sauce on the side for the crusts.

Thanks, Brick. It was really good and relatively healthy since it was wheat crust and light on the cheese.
